The Little Man’s Tips

Select a quality blend that is suitable for making coffee for your Mocha.

Fill the boiler to the lower level of the safety valve, without exceeding it and using fresh, possibly low limescale water.

Fill the filter generously, without pressing the coffee powder, forming a small wedge and preventing dust leaking on the boiler edges. Close the coffee pot, tightly screwing the collector onto the boiler and place it on the stove.

The flame should never wrap around the coffee maker, but remain inside the bottom of the coffee maker, in order to allow an extraction in adequate times and not too quickly. As soon as you start to hear the typical gurgling of the Mocha, the coffee is ready and you will need to turn off the fire immediately.

Never let the excess coffee boil – this would burn it, compromising its success and making it too bitter.

Enjoy hot coffee, just ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than the one leachated at the beginning of the boil.
